Another Phillipino comfort-stew that’s easy to make. If you don’t like liver, just substitute for some other meat. I also tend to add more vegetables than it calls for.

Serves 4-6

Ingredients
1 1/2 lbs pork (0.7 kg)
1 lb liver
1 chopped medium onion
2 chopped fresh tomatoes
1 cup dried garbanzo beans / chickpeas (250 mL)
2 medium potatoes, peeled and diced
1 red pepper, sliced
2 cloves garlic, crushed
1 bay leaf
2 tbsp soy sauce (30 mL)
1 tbsp oil (15 mL)
1 lemon (squeeze the juice)
1/2 cup water (125 mL)
salt and pepper to taste

Preparation

Soak dried beans for several hours or overnight. Boil until tender. Set aside.

Cut meat and liver into small cubes. Marinate liver in lemon juice and soy sauce.

Heat oil. Sautee garlic, onion and tomatoes. Add pork and 1/2 cup water. Cover and simmer until pork is tender.

Add cubed potatoes. When almost done, add liver with marinade. Cook for another 5 mintues.

Add cooked beans and pepper. Season and cook for additional 5 minutes. Serve with steamed rice.
